This is a very New Orleans dish and I grew up with this and stuffed Mirlitons (a squash we don’t see around here) all my childhood. Stuffed with GA shrimp and Tasso ham, these rich and delicious baked eggplants just happen to be Paleo! We delivery this glorious meal with a boule and a salad of baby mixed greens with a house made champagne vinaigrette.
Each service for two includes a boule, our secret recipe compound butter and salad.
