This is another thing I grew up with. My great aunt, Fanny Farmer, had perfected them in her cookbook, “The Secrets of Southern Cooking” and my mom would make it as an entree. It is so rich I prefer to serve it as an appetizer.

  • If your event is 1 to 2 hours (house warming, home marketing event, short happy hour) then the small party portion is what you need.
  • If your event is 3 or more hours (a party for parties sake, a birthday, St. Patricks, the Oscars) then you want the “meal” portion.
