I don’t know how it elsewhere but in southern Louisiana, we will pickle absolutely anything. I grew up peering at oddities in large jars at the corners of the bars my whole childhood.
I pickle these eggs for about 5 days and then make an egg salad of mayonnaise, evoo, chives, parsley, and garlic. Getting the ham for these wonderful toast points is key and not easy but makes all the difference in the world.
If your event is 1 to 2 hours (house warming, home marketing event, short happy hour) then the small party portion is what you need.
If your event is 3 or more hours (a party for parties sake, a birthday, St. Patricks, the Oscars) then you want the “meal” portion.
